Blue cheese can be hard to pair but a Viognier with high acidity has the aromatics and bright flavor to handle the funk. Apricots and slight sweetness is a natural pairing. Try with Roussanneas well for an amazing pairing
Ingredients
- 20 Dried Apricots
- 3 ozs Creamy mild blue cheese like Buttermilk or Amish
- 1/2 cup Kuhlman Almonds Chopped
- 1 Sprig of Fresh Rosemary finely chopped
- 1 tbsp Honey
- 2 Slices of Crispy Bacon Crumbled
Directions
Spread blue cheese into each apricot, sprinkle with Kuhlman Cellars Herbed Almonds, bacon, and rosemary. Drizzle a tiny amount of honey over the top.
Feel free to substitute Apricot preserves and spread onto a cracker.
