Herbed Almond Garlic Pesto
- 5 cloves garlic (unpeeled)
- 1/2 cup Kuhlman Cellars Herbed Marcona Almonds
- 2 1/2 cups basil (about 3oz)
- 1/4 cup parsley
- 3/4 cup grated parmesean
- 1/2 tsp salt
- 3/4 cup olive oil
- 1/2 tsp Optional for a spicy pesto: Cayenne pepper
- 1 tsp sugar
Blend garlic cloves in a food processor fitted with a metal blade until finely minced. Turn off the processor and add the almonds, cheese, basil and parsley. Pulse until finely minced.
Set the processor to blend. While the processor is running, add the oil in a steady stream through the top opening. Process until incorporated. Season with salt and pepper to taste. Optional for a spicy pesto: add 1/2 tsp Cayenne pepper and 1 tsp sugar to mixture, blend until well incorporated.
