Who doesn’t love a BLT?! This version takes it to the top! Pair with Hensell or Roussanne which both love the saltiness of blue cheese and bacon. The acidity in the tomatoes works great with acidity in wines. Good quality whole wheat bread is a must and toasting gives the sandwich more structure. Peppery arugula acts like pepper to your sandwich for a balance of spicy, sweet, salty, fatty and acidic!
Ingredients
  • 1/2 cup Olive Oil Mayonnaise
  • 3 tbsps Real Bacon Bits
  • 1 tsp Freshly Ground Black Pepper
  • 2 tsps Finely Diced Green Onions
  • 1 Clove Garlic Pressed or Finely Chopped
  • 1 Loaf of Good Quality Whole Wheat Bread sliced and toasted (or crackers)
  • 1 Small Bunch of Arugula
  • 1 Jar of Bacon Jam
  • 3 Fresh Tomatoes Sliced (Garden is the best but cherry tomatoes work as well)
  • 4 ozs Crumbled Mild Blue Cheese ie. Amish
  • Salt and Pepper to Taste
Directions

In a small bowl mix together mayo, 2 tbsp bacon bits, a teaspoon black pepper, and 2 tbsp diced scallions and garlic. Set aside

Assemble: Onto toast place some arugula, top with bacon jam, sliced tomato. Lightly salt to taste. Top with blue cheese and some aioli. Sprinkle with extra scallions. You can top with extra bacon bits if desired. Add your second piece of Toast. Enjoy!
